ZDP-189 is an ultra-high carbon powdered steel by Hitachi Metals, achieving the highest hardness among commonly used knife steels. At 64-67 HRC, it holds an edge for an extraordinarily long time. However, it is notoriously difficult to sharpen and can be brittle. Used in premium knives by makers like Hattori.
