Aritsugu is Japan's oldest cutlery maker, established in 1560 in Kyoto. Originally sword smiths, they transitioned to kitchen knives and have served the Imperial Court. Their shop in Nishiki Market is a Kyoto landmark. Each knife is hand-forged by master craftsmen using traditional techniques.
